Shortbread Fingers
Buttery, crumbly Scottish shortbread with a delicate melt-in-your-mouth texture.

Ingredients
- •225g butter, softened
- •100g caster sugar
- •275g plain flour
- •pinch salt
Directions
- 1Preheat oven to 190°C (375°F).
- 2Cream together butter and sugar until pale and fluffy.
- 3Mix in flour and salt until the mixture resembles breadcrumbs, then knead gently until combined.
- 4Press dough into a lined 20cm square baking tin and prick all over with a fork.
- 5Bake for 15-20 minutes until pale golden brown.
- 6Cool in the tin for 5 minutes, then cut into finger-shaped pieces and transfer to a wire rack.
