Shoyu Ramen
A rich and savory Japanese noodle soup with soy-based broth, tender chashu pork, and fresh toppings.

Ingredients
- •4 cups chicken or vegetable broth
- •3 tablespoons soy sauce
- •1 tablespoon mirin
- •1 tablespoon sesame oil
- •2 cloves garlic, minced
- •1 teaspoon grated ginger
- •8 ounces ramen noodles
- •6 ounces cooked pork or chicken, sliced
- •2 soft-boiled eggs, halved
- •1 cup fresh spinach or bok choy
- •2 green onions, sliced
- •1 sheet nori seaweed, cut into strips
Directions
- 1Heat broth in a large pot over medium-high heat and bring to a simmer.
- 2Stir in soy sauce, mirin, sesame oil, garlic, and ginger, then simmer for 5 minutes.
- 3Cook ramen noodles according to package directions, then drain and rinse.
- 4Divide noodles between two bowls and ladle hot broth over them.
- 5Top each bowl with pork, soft-boiled egg halves, spinach, green onions, and nori.
- 6Serve immediately while hot and enjoy.
