Shoyu Ramen

A rich and savory Japanese noodle soup with soy-based broth, tender chashu pork, and fresh toppings.

Ingredients

  • 4 cups chicken or vegetable broth
  • 3 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 8 ounces ramen noodles
  • 6 ounces cooked pork or chicken, sliced
  • 2 soft-boiled eggs, halved
  • 1 cup fresh spinach or bok choy
  • 2 green onions, sliced
  • 1 sheet nori seaweed, cut into strips

Directions

  1. 1Heat broth in a large pot over medium-high heat and bring to a simmer.
  2. 2Stir in soy sauce, mirin, sesame oil, garlic, and ginger, then simmer for 5 minutes.
  3. 3Cook ramen noodles according to package directions, then drain and rinse.
  4. 4Divide noodles between two bowls and ladle hot broth over them.
  5. 5Top each bowl with pork, soft-boiled egg halves, spinach, green onions, and nori.
  6. 6Serve immediately while hot and enjoy.
