Shrimp and Avocado Wrap

Ingredients
- •1 lb large shrimp, peeled and deveined
- •2 large flour tortillas
- •1 ripe avocado, sliced
- •1 cup fresh spinach or arugula
- •1 lime
- •2 tbsp olive oil
- •1/2 cup diced tomatoes
- •1/4 cup diced red onion
- •1/4 cup fresh cilantro, chopped
- •2 tbsp sour cream or Greek yogurt
- •to taste salt and black pepper
Directions
- 1Heat olive oil in a large skillet over medium-high heat and season shrimp with salt and pepper.
- 2Cook shrimp for 2-3 minutes per side until pink and cooked through, then squeeze fresh lime juice over them and set aside.
- 3Warm tortillas in a dry pan for 30 seconds per side until pliable.
- 4Mix sour cream or Greek yogurt with lime juice and cilantro to create the dressing.
- 5Lay each tortilla flat and spread the dressing evenly across the center.
- 6Layer spinach, avocado slices, tomatoes, red onion, and cooked shrimp on each tortilla.
- 7Roll up the wrap tightly, tucking in the sides, slice diagonally, and serve immediately.
