Shrimp and Avocado Wrap

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 2 large flour tortillas
  • 1 ripe avocado, sliced
  • 1 cup fresh spinach or arugula
  • 1 lime
  • 2 tbsp olive oil
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp sour cream or Greek yogurt
  • to taste salt and black pepper

Directions

  1. 1Heat olive oil in a large skillet over medium-high heat and season shrimp with salt and pepper.
  2. 2Cook shrimp for 2-3 minutes per side until pink and cooked through, then squeeze fresh lime juice over them and set aside.
  3. 3Warm tortillas in a dry pan for 30 seconds per side until pliable.
  4. 4Mix sour cream or Greek yogurt with lime juice and cilantro to create the dressing.
  5. 5Lay each tortilla flat and spread the dressing evenly across the center.
  6. 6Layer spinach, avocado slices, tomatoes, red onion, and cooked shrimp on each tortilla.
  7. 7Roll up the wrap tightly, tucking in the sides, slice diagonally, and serve immediately.
