Shrimp and Broccoli Stir-Fry with Rice

Ingredients

  • 2 cups long-grain white rice
  • 1 pound large shrimp, peeled and deveined
  • 4 cups fresh broccoli florets
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame oil
  • 1/2 cup chicken broth
  • 1 tablespoon cornstarch

Directions

  1. 1Cook rice according to package directions and set aside.
  2. 2In a small bowl, whisk together soy sauce, oyster sauce, chicken broth, sesame oil, and cornstarch.
  3. 3Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat. Add shrimp and cook 2-3 minutes per side until pink. Remove and set aside.
  4. 4Add remaining oil to the skillet, then stir-fry garlic and ginger for 30 seconds until fragrant.
  5. 5Add broccoli florets and stir-fry for 3-4 minutes until tender-crisp.
  6. 6Return shrimp to the skillet, pour in the sauce mixture, and toss everything together for 1-2 minutes until sauce thickens.
  7. 7Serve the stir-fry over cooked rice.
