Shrimp and Grits

Ingredients
- •1 cup whole milk
- •3 cups chicken broth
- •1 cup cornmeal
- •4 tablespoons butter
- •1 cup shredded cheddar cheese
- •6 slices bacon, chopped
- •1.5 pounds large shrimp, peeled and deveined
- •2 cloves garlic, minced
- •1 can (14.5 oz) diced tomatoes
- •2 tablespoons olive oil
- •to taste salt and pepper
- •1 teaspoon paprika
Directions
- 1Cook bacon in a skillet until crispy, remove and set aside, keeping 2 tablespoons of drippings.
- 2Bring chicken broth and milk to a boil, slowly whisk in cornmeal while stirring constantly to avoid lumps.
- 3Reduce heat to low and stir frequently for 15-20 minutes until grits are creamy and thick, then stir in butter and cheese.
- 4In another skillet, heat olive oil over medium-high heat, season shrimp with salt, pepper, and paprika, then cook for 2-3 minutes per side until pink.
- 5Add garlic to the shrimp, cook for 30 seconds, then add diced tomatoes and bacon, simmer for 2 minutes.
- 6Divide grits among bowls and top with shrimp mixture and sauce.
