Ingredients

  • 1 cup whole milk
  • 3 cups chicken broth
  • 1 cup cornmeal
  • 4 tablespoons butter
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, chopped
  • 1.5 pounds large shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • 1 teaspoon paprika

Directions

  1. 1Cook bacon in a skillet until crispy, remove and set aside, keeping 2 tablespoons of drippings.
  2. 2Bring chicken broth and milk to a boil, slowly whisk in cornmeal while stirring constantly to avoid lumps.
  3. 3Reduce heat to low and stir frequently for 15-20 minutes until grits are creamy and thick, then stir in butter and cheese.
  4. 4In another skillet, heat olive oil over medium-high heat, season shrimp with salt, pepper, and paprika, then cook for 2-3 minutes per side until pink.
  5. 5Add garlic to the shrimp, cook for 30 seconds, then add diced tomatoes and bacon, simmer for 2 minutes.
  6. 6Divide grits among bowls and top with shrimp mixture and sauce.
