Shrimp Scampi Pasta

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 pound linguine or spaghetti
  • 6 cloves garlic, minced
  • 4 tablespoons butter
  • 3 tablespoons olive oil
  • ½ cup dry white wine
  • 2 lemons, juiced
  • ¼ teaspoon red pepper flakes
  • to taste Salt and black pepper
  • ¼ cup fresh parsley, chopped

Directions

  1. 1Cook pasta according to package directions until al dente; drain and reserve 1 cup pasta water.
  2. 2Heat olive oil and butter in a large skillet over medium-high heat. Add minced garlic and red pepper flakes, sauté for 30 seconds until fragrant.
  3. 3Add shrimp to the skillet, season with salt and pepper, and cook for 2 minutes per side until they begin to turn pink.
  4. 4Deglaze the pan with white wine and lemon juice, scraping up any browned bits; simmer for 2 minutes.
  5. 5Add cooked pasta to the skillet and toss gently, adding pasta water as needed to create a light sauce.
  6. 6Remove from heat, stir in fresh parsley, adjust seasoning, and serve immediately.
