Shrimp Toast

Ingredients
- •1/2 pound shrimp, peeled and deveined
- •2 tablespoons mayonnaise
- •1 tablespoon cornstarch
- •1 teaspoon soy sauce
- •1/2 teaspoon sesame oil
- •1 egg white egg white
- •2 cloves garlic, minced
- •4 slices white bread
- •2 cups vegetable oil for frying
- •to taste salt and white pepper
Directions
- 1Finely chop shrimp and combine with mayonnaise, cornstarch, soy sauce, sesame oil, egg white, garlic, salt, and white pepper until well mixed.
- 2Spread the shrimp mixture evenly onto each slice of bread, pressing gently to adhere.
- 3Heat vegetable oil in a deep skillet to 350°F (175°C).
- 4Carefully place bread slices shrimp-side down into the hot oil and fry for 2-3 minutes until golden and crispy.
- 5Flip and fry the other side for 1-2 minutes until light golden.
- 6Remove with a slotted spoon and drain on paper towels.
- 7Cut diagonally into triangles and serve immediately with sweet and sour sauce or hot mustard for dipping.
