Shrimp with Lobster Sauce

Ingredients
- •1 lb large shrimp, peeled and deveined
- •3 tbsp vegetable oil
- •4 cloves garlic, minced
- •1 tbsp ginger, minced
- •2 eggs, beaten
- •1/2 cup chicken broth
- •3 tbsp oyster sauce
- •1 tbsp soy sauce
- •1 tsp sugar
- •2 tbsp cornstarch mixed with 3 tbsp water
- •2 green onions, chopped
- •1/2 tsp white pepper
Directions
- 1Heat 1.5 tbsp oil in a wok or large skillet over high heat and stir-fry shrimp for 2-3 minutes until pink, then set aside.
- 2Add remaining oil to the wok and stir-fry garlic and ginger for 30 seconds until fragrant.
- 3Pour in chicken broth, oyster sauce, soy sauce, and sugar, then bring to a simmer.
- 4Slowly drizzle beaten eggs into the simmering sauce while stirring to create egg ribbons, then cook for 1 minute.
- 5Stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens and turns glossy.
- 6Return shrimp to the wok, add white pepper and green onions, then toss gently for 1 minute to combine.
- 7Serve immediately over steamed white rice.
