Shrimp with Lobster Sauce

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp vegetable oil
  • 4 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 eggs, beaten
  • 1/2 cup chicken broth
  • 3 tbsp oyster sauce
  • 1 tbsp soy sauce
  • 1 tsp sugar
  • 2 tbsp cornstarch mixed with 3 tbsp water
  • 2 green onions, chopped
  • 1/2 tsp white pepper

Directions

  1. 1Heat 1.5 tbsp oil in a wok or large skillet over high heat and stir-fry shrimp for 2-3 minutes until pink, then set aside.
  2. 2Add remaining oil to the wok and stir-fry garlic and ginger for 30 seconds until fragrant.
  3. 3Pour in chicken broth, oyster sauce, soy sauce, and sugar, then bring to a simmer.
  4. 4Slowly drizzle beaten eggs into the simmering sauce while stirring to create egg ribbons, then cook for 1 minute.
  5. 5Stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens and turns glossy.
  6. 6Return shrimp to the wok, add white pepper and green onions, then toss gently for 1 minute to combine.
  7. 7Serve immediately over steamed white rice.
