Sierra Leone Coconut Greens

Ingredients
- •2 lb leafy greens, chopped
- •1 medium yellow onion, diced
- •2 tomatoes, diced
- •1 can (13.5 oz) coconut milk
- •1 tbsp vegetable oil
- •1 tsp salt
Directions
- 1Heat vegetable oil and cook onion for 4 minutes.
- 2Add tomatoes and cook for 4 minutes.
- 3Add the leafy greens in batches and let them wilt.
- 4Pour in coconut milk and salt.
- 5Simmer uncovered for 8 minutes.
- 6Serve when the greens are tender and the sauce lightly coats them.
