Ingredients

  • 2 lb leafy greens, chopped
  • 1 medium yellow onion, diced
  • 2 tomatoes, diced
  • 1 can (13.5 oz) coconut milk
  • 1 tbsp vegetable oil
  • 1 tsp salt

Directions

  1. 1Heat vegetable oil and cook onion for 4 minutes.
  2. 2Add tomatoes and cook for 4 minutes.
  3. 3Add the leafy greens in batches and let them wilt.
  4. 4Pour in coconut milk and salt.
  5. 5Simmer uncovered for 8 minutes.
  6. 6Serve when the greens are tender and the sauce lightly coats them.
