Sigara Böreği (Crispy Cheese Rolls)
Thin phyllo pastry rolled around a salty white cheese and parsley filling and pan-fried until shatteringly crisp, these are the ultimate Turkish snack or starter that disappear the moment they hit the table. They are quick to make and utterly addictive.

Ingredients
- •8 sheets phyllo pastry sheets, thawed
- •1 cup (200 g) feta cheese, crumbled
- •1/4 cup ricotta cheese
- •1/3 cup fresh flat-leaf parsley, finely chopped
- •1 large egg, beaten (for sealing)
- •1/2 cup neutral oil (canola or vegetable), for frying
- •1/4 tsp black pepper
Directions
- 1Mix crumbled feta, ricotta, parsley, and black pepper in a bowl until combined.
- 2Lay one phyllo sheet on a clean surface, keeping the rest covered with a damp towel, and cut it in half lengthwise.
- 3Place a heaped tablespoon of filling along the short end of each strip, fold in the sides slightly, and roll tightly into a cigar shape, brushing the final edge with beaten egg to seal.
- 4Repeat with remaining phyllo and filling to make about 16 rolls.
- 5Heat oil in a wide skillet over medium heat until shimmering, add rolls seam-side down in a single layer, and fry for 2 to 3 minutes per side until deep golden brown.
- 6Drain on paper towels and serve immediately while hot and crispy.
💡 Traditional Turkish beyaz peynir (white cheese) is very similar to feta and can be found at Middle Eastern or Mediterranean grocery stores across Canada. The feta-ricotta combination available at any supermarket is an excellent substitute. Do not skip pressing out excess moisture from feta.
