Korean blanched spinach seasoned with garlic, soy sauce, sesame oil, scallion, and sesame seeds for a simple banchan.

Ingredients
- •1 lb fresh spinach
- •1 clove garlic, finely minced
- •1 tbsp soy sauce
- •2 tsp sesame oil
- •1 green onion, finely sliced
- •2 tsp sesame seeds, toasted
Directions
- 1Blanch the spinach in boiling water for 30 seconds until just wilted.
- 2Transfer the spinach immediately to cold water, then drain it thoroughly.
- 3Squeeze out excess moisture and cut the spinach into shorter lengths.
- 4Mix garlic, soy sauce, sesame oil, green onion, and sesame seeds in a bowl.
- 5Add the spinach and massage the seasoning gently through the leaves.
- 6Serve at room temperature or chilled.
💡 Squeeze the spinach firmly after blanching; excess water dilutes the sesame-soy seasoning and makes the banchan taste flat.
