Simit
A crispy, sesame-crusted circular bread with a chewy interior, perfect for breakfast dipped in tea or enjoyed with cheese and olives.

Ingredients
- •500g all-purpose flour
- •300ml warm water
- •7g instant yeast
- •10g salt
- •15ml olive oil
- •200g sesame seeds
- •30g molasses or honey
- •1 liter water for dipping
Directions
- 1Mix flour, yeast, salt, water, and olive oil in a bowl and knead for 10 minutes until smooth; let dough rise for 45 minutes until doubled.
- 2Divide dough into 8 equal pieces and roll each into a long rope about 40cm long.
- 3Form each rope into a circle by connecting the ends, then place on a baking sheet and let rise for 15 minutes.
- 4Combine molasses with 1 liter of water in a pot and bring to a simmer; dip each simit into the molasses water for 2-3 seconds on each side.
- 5Pour sesame seeds onto a plate and roll the wet simit through them to coat generously on all sides.
- 6Place simit on parchment-lined baking sheets and bake at 200°C (390°F) for 20-25 minutes until golden and crispy.
