Simit

A crispy, sesame-crusted circular bread with a chewy interior, perfect for breakfast dipped in tea or enjoyed with cheese and olives.

Ingredients

  • 500g all-purpose flour
  • 300ml warm water
  • 7g instant yeast
  • 10g salt
  • 15ml olive oil
  • 200g sesame seeds
  • 30g molasses or honey
  • 1 liter water for dipping

Directions

  1. 1Mix flour, yeast, salt, water, and olive oil in a bowl and knead for 10 minutes until smooth; let dough rise for 45 minutes until doubled.
  2. 2Divide dough into 8 equal pieces and roll each into a long rope about 40cm long.
  3. 3Form each rope into a circle by connecting the ends, then place on a baking sheet and let rise for 15 minutes.
  4. 4Combine molasses with 1 liter of water in a pot and bring to a simmer; dip each simit into the molasses water for 2-3 seconds on each side.
  5. 5Pour sesame seeds onto a plate and roll the wet simit through them to coat generously on all sides.
  6. 6Place simit on parchment-lined baking sheets and bake at 200°C (390°F) for 20-25 minutes until golden and crispy.
