Slow Cooker Balsamic Beef and Mushrooms

Ingredients

  • 3 lb beef chuck roast, cut into 2-inch pieces
  • 1 lb cremini mushrooms, halved
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • ⅓ cup balsamic vinegar
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • 2 tbsp cornstarch
  • 2 tbsp water

Directions

  1. 1Place beef, mushrooms, onion, and garlic in the slow cooker.
  2. 2Whisk broth, balsamic vinegar, tomato paste, thyme, salt, and pepper; pour over the beef.
  3. 3Cover and cook on LOW for 7–8 hours, until the beef is fork-tender.
  4. 4Transfer beef and mushrooms to a serving dish and keep warm.
  5. 5Pour two cups of cooking liquid into a saucepan and bring to a simmer.
  6. 6Whisk cornstarch with water, stir it into the liquid, and cook until glossy.
  7. 7Spoon the balsamic gravy over the beef and mushrooms.
