Slow Cooker Balsamic Beef and Mushrooms

Ingredients
- •3 lb beef chuck roast, cut into 2-inch pieces
- •1 lb cremini mushrooms, halved
- •1 onion, sliced
- •3 cloves garlic, minced
- •1 cup beef broth
- •⅓ cup balsamic vinegar
- •2 tbsp tomato paste
- •1 tsp dried thyme
- •1 tsp kosher salt
- •½ tsp black pepper
- •2 tbsp cornstarch
- •2 tbsp water
Directions
- 1Place beef, mushrooms, onion, and garlic in the slow cooker.
- 2Whisk broth, balsamic vinegar, tomato paste, thyme, salt, and pepper; pour over the beef.
- 3Cover and cook on LOW for 7–8 hours, until the beef is fork-tender.
- 4Transfer beef and mushrooms to a serving dish and keep warm.
- 5Pour two cups of cooking liquid into a saucepan and bring to a simmer.
- 6Whisk cornstarch with water, stir it into the liquid, and cook until glossy.
- 7Spoon the balsamic gravy over the beef and mushrooms.
