Slow Cooker Black Bean Sweet Potato Chili
Black beans, sweet potatoes, tomatoes, and smoky spices make a thick meatless chili built for freezing and easy toppings.

Ingredients
- •3 cans (540 ml each) black beans, drained and rinsed
- •2 sweet potatoes, peeled and diced
- •1 can (796 ml) tomatoes, diced
- •1 red bell pepper, diced
- •1 onion, diced
- •2 cups vegetable broth
- •2 tbsp chili powder
- •2 tsp ground cumin
- •1 tsp smoked paprika
- •1 cup corn kernels
- •1 lime, juiced
- •½ cup cilantro, chopped
Directions
- 1Add black beans, sweet potatoes, tomatoes, bell pepper, onion, broth, chili powder, cumin, and paprika to the slow cooker.
- 2Cover and cook on LOW for 5–6 hours, until the sweet potatoes are tender.
- 3Mash about one cup of beans and sweet potatoes against the cooker wall.
- 4Stir in corn and cook on HIGH for 10 minutes.
- 5Add lime juice and taste for seasoning.
- 6Finish with cilantro and serve with your preferred chili toppings.
