Slow Cooker Black Bean Sweet Potato Chili

Black beans, sweet potatoes, tomatoes, and smoky spices make a thick meatless chili built for freezing and easy toppings.

Ingredients

  • 3 cans (540 ml each) black beans, drained and rinsed
  • 2 sweet potatoes, peeled and diced
  • 1 can (796 ml) tomatoes, diced
  • 1 red bell pepper, diced
  • 1 onion, diced
  • 2 cups vegetable broth
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 cup corn kernels
  • 1 lime, juiced
  • ½ cup cilantro, chopped

Directions

  1. 1Add black beans, sweet potatoes, tomatoes, bell pepper, onion, broth, chili powder, cumin, and paprika to the slow cooker.
  2. 2Cover and cook on LOW for 5–6 hours, until the sweet potatoes are tender.
  3. 3Mash about one cup of beans and sweet potatoes against the cooker wall.
  4. 4Stir in corn and cook on HIGH for 10 minutes.
  5. 5Add lime juice and taste for seasoning.
  6. 6Finish with cilantro and serve with your preferred chili toppings.
