Slow Cooker Butter Chicken

Ingredients

  • 2 lb boneless skinless chicken thighs
  • 1 can (796 ml) canned crushed tomatoes
  • 0.5 cup heavy cream
  • 3 tbsp unsalted butter
  • 1 large yellow onion, diced
  • 5 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp garam masala
  • 1.5 tsp ground cumin
  • 1.5 tsp ground coriander
  • 0.5 tsp turmeric
  • 0.5 tsp chili powder or cayenne
  • 1.5 tsp salt
  • 2 tbsp tomato paste
  • 0.25 cup fresh cilantro, for garnish

Directions

  1. 1Add onion, garlic, ginger, crushed tomatoes, tomato paste, garam masala, cumin, coriander, turmeric, chili powder, and salt to the slow cooker and stir well.
  2. 2Add chicken thighs, pushing them into the sauce to submerge.
  3. 3Dot butter over the top, cover, and cook on LOW for 5 hours or HIGH for 3 hours.
  4. 4Remove chicken and use an immersion blender to blend the sauce until smooth directly in the pot (or carefully transfer to a blender).
  5. 5Chop or shred chicken into bite-sized pieces and return to the blended sauce.
  6. 6Stir in heavy cream and cook uncovered on HIGH for 15 minutes until sauce thickens slightly.
  7. 7Serve over basmati rice, garnished with fresh cilantro, with warm naan on the side.

💡 Garam masala is widely available at Loblaws, Superstore, and Indian grocery stores across Canada. For a dairy-free version, substitute coconut cream for the heavy cream — it's equally delicious.
