Slow Cooker Butter Chicken

Ingredients
- •2 lb boneless skinless chicken thighs
- •1 can (796 ml) canned crushed tomatoes
- •0.5 cup heavy cream
- •3 tbsp unsalted butter
- •1 large yellow onion, diced
- •5 garlic cloves, minced
- •1 tbsp fresh ginger, grated
- •2 tsp garam masala
- •1.5 tsp ground cumin
- •1.5 tsp ground coriander
- •0.5 tsp turmeric
- •0.5 tsp chili powder or cayenne
- •1.5 tsp salt
- •2 tbsp tomato paste
- •0.25 cup fresh cilantro, for garnish
Directions
- 1Add onion, garlic, ginger, crushed tomatoes, tomato paste, garam masala, cumin, coriander, turmeric, chili powder, and salt to the slow cooker and stir well.
- 2Add chicken thighs, pushing them into the sauce to submerge.
- 3Dot butter over the top, cover, and cook on LOW for 5 hours or HIGH for 3 hours.
- 4Remove chicken and use an immersion blender to blend the sauce until smooth directly in the pot (or carefully transfer to a blender).
- 5Chop or shred chicken into bite-sized pieces and return to the blended sauce.
- 6Stir in heavy cream and cook uncovered on HIGH for 15 minutes until sauce thickens slightly.
- 7Serve over basmati rice, garnished with fresh cilantro, with warm naan on the side.
