Slow Cooker Chicken and Corn Chowder

Ingredients
- •1½ lb chicken breasts, boneless and skinless
- •3 cups corn kernels
- •1½ lb yellow potatoes, diced
- •1 onion, diced
- •2 celery stalks, diced
- •4 cups chicken broth
- •1 tsp dried thyme
- •3 tbsp unsalted butter
- •3 tbsp all-purpose flour
- •1½ cups milk
- •½ cup heavy cream
- •3 green onions, sliced
Directions
- 1Add chicken, corn, potatoes, onion, celery, broth, and thyme to the slow cooker.
- 2Cover and cook on LOW for 5–6 hours, until the chicken and potatoes are tender.
- 3Transfer the chicken to a plate, shred it, and return it to the cooker.
- 4Melt butter in a saucepan, whisk in flour, and cook for 1 minute.
- 5Gradually whisk in milk and simmer until thick enough to coat a spoon.
- 6Stir the milk mixture and cream into the chowder; cook on HIGH for 15 minutes.
- 7Finish with green onions and season to taste.
