Ingredients

  • 1½ lb ground chicken
  • ½ cup breadcrumbs
  • 1 egg, beaten
  • ½ cup parmesan cheese, grated
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • ½ tsp kosher salt
  • 3 cups marinara sauce
  • 1½ cups mozzarella cheese, shredded
  • ¼ cup basil, torn

Directions

  1. 1Mix ground chicken, breadcrumbs, egg, Parmesan, garlic, Italian seasoning, and salt just until combined.
  2. 2Shape the mixture into 20 meatballs and arrange them in the slow cooker.
  3. 3Pour marinara around and over the meatballs without stirring.
  4. 4Cover and cook on LOW for 3½–4 hours, until the meatballs reach 74°C (165°F).
  5. 5Sprinkle mozzarella over the meatballs, cover, and cook on HIGH for 10 minutes.
  6. 6Finish with basil and serve over pasta, polenta, or toasted rolls.
