Slow Cooker Chicken Parmesan Meatballs

Ingredients
- •1½ lb ground chicken
- •½ cup breadcrumbs
- •1 egg, beaten
- •½ cup parmesan cheese, grated
- •2 cloves garlic, minced
- •1 tsp Italian seasoning
- •½ tsp kosher salt
- •3 cups marinara sauce
- •1½ cups mozzarella cheese, shredded
- •¼ cup basil, torn
Directions
- 1Mix ground chicken, breadcrumbs, egg, Parmesan, garlic, Italian seasoning, and salt just until combined.
- 2Shape the mixture into 20 meatballs and arrange them in the slow cooker.
- 3Pour marinara around and over the meatballs without stirring.
- 4Cover and cook on LOW for 3½–4 hours, until the meatballs reach 74°C (165°F).
- 5Sprinkle mozzarella over the meatballs, cover, and cook on HIGH for 10 minutes.
- 6Finish with basil and serve over pasta, polenta, or toasted rolls.
