Slow Cooker French Dip Sandwiches

Ingredients
- •3 lb beef chuck roast
- •2 cups beef broth
- •2 tbsp Worcestershire sauce
- •1 tbsp soy sauce
- •3 garlic cloves, minced
- •1 yellow onion, thinly sliced
- •1 tsp dried thyme
- •0.5 tsp dried rosemary
- •0.5 tsp black pepper
- •1 tsp salt
- •6 hoagie or submarine rolls
- •12 slices provolone or Swiss cheese slices
- •1 tbsp vegetable oil
Directions
- 1Heat oil in a large skillet over high heat; sear roast for 3 minutes per side until browned all over.
- 2Place sliced onion in the bottom of the slow cooker; set seared roast on top.
- 3Whisk together beef broth, Worcestershire sauce, soy sauce, garlic, thyme, rosemary, salt, and pepper; pour over the roast.
- 4Cover and cook on LOW for 8 hours until beef is fall-apart tender.
- 5Remove beef and shred or slice thinly; strain cooking liquid into a bowl to use as au jus.
- 6Pile beef onto split rolls, top with cheese slices, and broil open-faced for 2-3 minutes until cheese is melted and bubbly.
- 7Serve with small bowls of warm au jus for dipping.
💡 Look for hoagie rolls in the bakery section of most Canadian grocery stores. If you can't find them, use a full baguette cut into sections. The au jus freezes beautifully — save it for a second batch.
