Slow Cooker Honey Garlic Chicken

Sticky, sweet, garlicky sauce clinging to juicy chicken thighs — this is the easiest weeknight dinner that tastes like you tried way harder than you did. Serve it over steamed rice and let the sauce do all the talking.

Ingredients

  • 2 lb boneless skinless chicken thighs
  • 0.33 cup honey
  • 0.25 cup soy sauce
  • 5 garlic cloves, minced
  • 3 tbsp ketchup
  • 1 tbsp apple cider vinegar
  • 1 tsp sesame oil
  • 2 tbsp cornstarch
  • 2 tbsp cold water
  • to taste salt and pepper
  • 1 tsp sesame seeds, for garnish
  • 2 green onions, sliced, for garnish
  • 3 cups cooked white rice, for serving

Directions

  1. 1Season chicken thighs lightly with salt and pepper and place in the slow cooker.
  2. 2Whisk together honey, soy sauce, garlic, ketchup, apple cider vinegar, and sesame oil; pour over chicken.
  3. 3Cover and cook on LOW for 4 hours or HIGH for 2.5 hours until chicken is cooked through.
  4. 4Remove chicken and set aside; switch slow cooker to HIGH.
  5. 5Whisk cornstarch and cold water together until smooth; stir into cooking liquid in the slow cooker.
  6. 6Cook uncovered on HIGH for 15 minutes, stirring occasionally, until sauce thickens and becomes glossy.
  7. 7Return chicken to the sauce, toss to coat, and serve over rice garnished with sesame seeds and green onions.

💡 For extra caramelisation, after step 3 you can place the chicken on a foil-lined baking sheet and broil for 3–4 minutes while the sauce thickens — totally optional but gorgeous.
