Slow Cooker Italian Wedding Soup

Turkey meatballs, vegetables, tiny pasta, and spinach make a comforting Italian-American soup with excellent lunch leftovers.

Ingredients

  • 1 lb ground turkey
  • ¼ cup breadcrumbs
  • 1 egg, beaten
  • ¼ cup parmesan cheese, grated
  • 1 tsp Italian seasoning
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 7 cups chicken broth
  • ¾ cup acini di pepe pasta
  • 4 cups spinach
  • 1 tbsp lemon juice

Directions

  1. 1Mix turkey, breadcrumbs, egg, Parmesan, and Italian seasoning; shape into small meatballs.
  2. 2Add onion, carrots, celery, broth, and meatballs to the slow cooker.
  3. 3Cover and cook on LOW for 4 hours, until the meatballs are cooked through.
  4. 4Stir in acini di pepe and cook on HIGH for 20–25 minutes, until just tender.
  5. 5Add spinach and cook for 5 minutes, until wilted.
  6. 6Finish with lemon juice and season the broth to taste.

💡 If storing leftovers, cook the pasta separately and add it to each bowl so it does not swell in the broth.
