Slow Cooker Italian Wedding Soup
Turkey meatballs, vegetables, tiny pasta, and spinach make a comforting Italian-American soup with excellent lunch leftovers.

Ingredients
- •1 lb ground turkey
- •¼ cup breadcrumbs
- •1 egg, beaten
- •¼ cup parmesan cheese, grated
- •1 tsp Italian seasoning
- •1 onion, diced
- •2 carrots, diced
- •2 celery stalks, diced
- •7 cups chicken broth
- •¾ cup acini di pepe pasta
- •4 cups spinach
- •1 tbsp lemon juice
Directions
- 1Mix turkey, breadcrumbs, egg, Parmesan, and Italian seasoning; shape into small meatballs.
- 2Add onion, carrots, celery, broth, and meatballs to the slow cooker.
- 3Cover and cook on LOW for 4 hours, until the meatballs are cooked through.
- 4Stir in acini di pepe and cook on HIGH for 20–25 minutes, until just tender.
- 5Add spinach and cook for 5 minutes, until wilted.
- 6Finish with lemon juice and season the broth to taste.
💡 If storing leftovers, cook the pasta separately and add it to each bowl so it does not swell in the broth.
