Slow Cooker Maple Dijon Pork Roast

Ingredients
- •3 lb pork loin roast
- •2 apples, sliced
- •1 onion, sliced
- •⅓ cup maple syrup
- •¼ cup dijon mustard
- •½ cup chicken broth
- •2 cloves garlic, minced
- •1 tsp dried thyme
- •1 tsp kosher salt
- •½ tsp black pepper
- •1 tbsp cornstarch
- •2 tbsp water
Directions
- 1Arrange apples and onion in the slow cooker and set the pork roast on top.
- 2Whisk maple syrup, Dijon, broth, garlic, thyme, salt, and pepper; pour over the pork.
- 3Cover and cook on LOW for 6–7 hours, until the pork is tender but sliceable.
- 4Transfer pork and apples to a platter and keep warm.
- 5Pour the cooking liquid into a saucepan and bring it to a simmer.
- 6Whisk cornstarch with water, stir it into the sauce, and simmer until glossy.
- 7Slice the pork and spoon the maple-Dijon sauce over top.
