Slow Cooker Pork and Apple Stew

Ingredients
- •2½ lb pork shoulder, cut into 1½-inch pieces
- •1½ lb baby potatoes, halved
- •3 carrots, thickly sliced
- •2 apples, cut into wedges
- •1 onion, diced
- •2 cups apple cider
- •1 cup chicken broth
- •2 tbsp dijon mustard
- •1 tsp dried thyme
- •1 bay leaf
- •2 tbsp cornstarch
- •2 tbsp water
Directions
- 1Add pork, potatoes, carrots, apples, onion, cider, broth, Dijon, thyme, and bay leaf to the slow cooker.
- 2Cover and cook on LOW for 7 hours, until the pork and potatoes are tender.
- 3Remove the bay leaf and transfer one cup of cooking liquid to a small saucepan.
- 4Bring the liquid to a simmer over medium heat.
- 5Whisk cornstarch with water, add it to the saucepan, and cook until thickened.
- 6Stir the thickened sauce back into the stew and serve.
