Slow Cooker Pork and Apple Stew

Ingredients

  • 2½ lb pork shoulder, cut into 1½-inch pieces
  • 1½ lb baby potatoes, halved
  • 3 carrots, thickly sliced
  • 2 apples, cut into wedges
  • 1 onion, diced
  • 2 cups apple cider
  • 1 cup chicken broth
  • 2 tbsp dijon mustard
  • 1 tsp dried thyme
  • 1 bay leaf
  • 2 tbsp cornstarch
  • 2 tbsp water

Directions

  1. 1Add pork, potatoes, carrots, apples, onion, cider, broth, Dijon, thyme, and bay leaf to the slow cooker.
  2. 2Cover and cook on LOW for 7 hours, until the pork and potatoes are tender.
  3. 3Remove the bay leaf and transfer one cup of cooking liquid to a small saucepan.
  4. 4Bring the liquid to a simmer over medium heat.
  5. 5Whisk cornstarch with water, add it to the saucepan, and cook until thickened.
  6. 6Stir the thickened sauce back into the stew and serve.
