Ingredients

  • 3-4 lbs beef chuck roast
  • 4 medium potatoes, cut into chunks
  • 4 medium carrots, cut into 2-inch pieces
  • 1 medium onion, quartered
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

  1. 1Heat olive oil in a large skillet over medium-high heat and brown the beef roast on all sides for about 2 minutes per side, then transfer to the slow cooker.
  2. 2Add beef broth, tomato paste, thyme, salt, and pepper to the slow cooker and stir to combine.
  3. 3Arrange potatoes, carrots, and onion around the roast in the slow cooker.
  4. 4Cover and cook on low for 8 hours or on high for 4-5 hours, until the meat is fork-tender.
  5. 5Remove the roast to a cutting board and let rest for 10 minutes before slicing.
  6. 6Serve the sliced roast with vegetables and cooking liquid spooned over the top.
