Slow Cooker Red Lentil Sweet Potato Curry

Ingredients

  • 1½ cups red lentils, rinsed
  • 2 sweet potatoes, peeled and diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 can (400 ml) coconut milk
  • 1 can (398 ml) tomatoes, diced
  • 2 cups vegetable broth
  • 1½ tbsp curry powder
  • 1 tsp ground cumin
  • 4 cups spinach
  • 1 lime, juiced

Directions

  1. 1Add lentils, sweet potatoes, onion, garlic, ginger, coconut milk, tomatoes, broth, curry powder, and cumin to the slow cooker.
  2. 2Stir well, cover, and cook on LOW for 5–6 hours.
  3. 3Check the lentils; the curry should be thick and the sweet potatoes very tender.
  4. 4Stir in spinach and cook on HIGH for 10 minutes.
  5. 5Add lime juice and season to taste.
  6. 6Serve with rice or flatbread, thinning only if you prefer a looser curry.

💡 Freeze the curry in shallow containers; red lentils thicken further after chilling, so loosen with water when reheating.
