Slow Cooker Red Lentil Sweet Potato Curry
Red lentils and sweet potatoes melt into a thick coconut curry with gentle spices that freezes and reheats beautifully.

Ingredients
- •1½ cups red lentils, rinsed
- •2 sweet potatoes, peeled and diced
- •1 onion, diced
- •3 cloves garlic, minced
- •1 tbsp fresh ginger, grated
- •1 can (400 ml) coconut milk
- •1 can (398 ml) tomatoes, diced
- •2 cups vegetable broth
- •1½ tbsp curry powder
- •1 tsp ground cumin
- •4 cups spinach
- •1 lime, juiced
Directions
- 1Add lentils, sweet potatoes, onion, garlic, ginger, coconut milk, tomatoes, broth, curry powder, and cumin to the slow cooker.
- 2Stir well, cover, and cook on LOW for 5–6 hours.
- 3Check the lentils; the curry should be thick and the sweet potatoes very tender.
- 4Stir in spinach and cook on HIGH for 10 minutes.
- 5Add lime juice and season to taste.
- 6Serve with rice or flatbread, thinning only if you prefer a looser curry.
💡 Freeze the curry in shallow containers; red lentils thicken further after chilling, so loosen with water when reheating.
