Slow Cooker Turkey Taco Soup

Ingredients

- •1 onion, diced
- •1 can (796 ml) tomatoes, diced
- •1 can (540 ml) black beans, drained and rinsed
- •1½ cups corn kernels
- •3 cups chicken broth
- •2 tbsp chili powder
- •2 tsp ground cumin
- •1 tsp smoked paprika
- •1 lime, juiced
- •1 cup cheddar cheese, shredded
- •1 avocado, diced
Directions
- 1Brown ground turkey and onion in a skillet, breaking the turkey into crumbles.
- 2Transfer turkey to the slow cooker with tomatoes, black beans, corn, broth, chili powder, cumin, and paprika.
- 3Cover and cook on LOW for 4–5 hours.
- 4Stir the soup and lightly mash some black beans against the cooker wall for body.
- 5Add lime juice and taste for seasoning.
- 6Serve with cheddar and avocado, keeping the soup free of tortilla strips.
