Ingredients

  • 1½ lb ground turkey
  • 1 onion, diced
  • 1 can (796 ml) tomatoes, diced
  • 1 can (540 ml) black beans, drained and rinsed
  • 1½ cups corn kernels
  • 3 cups chicken broth
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 lime, juiced
  • 1 cup cheddar cheese, shredded
  • 1 avocado, diced

Directions

  1. 1Brown ground turkey and onion in a skillet, breaking the turkey into crumbles.
  2. 2Transfer turkey to the slow cooker with tomatoes, black beans, corn, broth, chili powder, cumin, and paprika.
  3. 3Cover and cook on LOW for 4–5 hours.
  4. 4Stir the soup and lightly mash some black beans against the cooker wall for body.
  5. 5Add lime juice and taste for seasoning.
  6. 6Serve with cheddar and avocado, keeping the soup free of tortilla strips.
