Ingredients

  • •3 large eggs
  • •2 tablespoons butter
  • •2 ounces cream cheese, softened
  • •2 ounces smoked salmon, sliced
  • •1 tablespoon fresh dill, chopped
  • •1 tablespoon capers
  • •2 tablespoons red onion, thinly sliced
  • •to taste salt and pepper

Directions

  1. 1Whisk together eggs with salt and pepper in a bowl until well combined.
  2. 2Heat butter in a non-stick skillet over medium heat until foamy.
  3. 3Pour eggs into the skillet and let cook undisturbed for 30 seconds, then gently push cooked portions toward center, tilting pan to allow uncooked egg to flow to edges.
  4. 4When eggs are mostly set but still slightly wet on top, dollop softened cream cheese on one half of the omelet.
  5. 5Layer smoked salmon, red onion, capers, and fresh dill over the cream cheese.
  6. 6Fold the omelet in half and slide onto a serving plate, garnishing with additional dill if desired.

💡 Add smoked salmon to the omelet only near the fold; prolonged heat dries the fish and makes its saltiness dominate the eggs.
