Smoky BBQ Kidney Bean & Pearl Barley Skillet

Hearty pearl barley and smoky kidney beans simmered in a tangy barbecue sauce topped with crunchy croutons and melted cheddar — a crowd-pleasing veggie dinner.

Ingredients

  • 1 cup pearl barley
  • 2 cans (15 oz each) kidney beans, drained and rinsed
  • 1/2 cup barbecue sauce
  • 2 cups chicken broth
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 cup cheddar cheese, shredded
  • 1 cup croutons

Directions

  1. 1Bring chicken broth and 1 cup water to a boil in a large skillet over high heat.
  2. 2Stir in pearl barley, reduce heat to medium, cover and cook 20 minutes.
  3. 3Add kidney beans, barbecue sauce, chili powder, and garlic powder; stir well.
  4. 4Simmer uncovered 5 minutes until barley is tender and sauce thickens.
  5. 5Season with salt and pepper, then top with shredded cheddar cheese.
  6. 6Scatter croutons over the top and serve immediately from the skillet.
