- •1 cup pearl barley
- •2 cans (15 oz each) kidney beans, drained and rinsed
- •1/2 cup barbecue sauce
- •2 cups chicken broth
- •1 tsp chili powder
- •1/2 tsp garlic powder
- •1/2 cup cheddar cheese, shredded
- •1 cup croutons
Directions
- 1Bring chicken broth and 1 cup water to a boil in a large skillet over high heat.
- 2Stir in pearl barley, reduce heat to medium, cover and cook 20 minutes.
- 3Add kidney beans, barbecue sauce, chili powder, and garlic powder; stir well.
- 4Simmer uncovered 5 minutes until barley is tender and sauce thickens.
- 5Season with salt and pepper, then top with shredded cheddar cheese.
- 6Scatter croutons over the top and serve immediately from the skillet.
