Ingredients

  • •2 3/4 cups all-purpose flour
  • •1 teaspoon baking soda
  • •1/2 teaspoon salt
  • •1 cup unsalted butter, softened
  • •1 1/2 cups granulated sugar
  • •1 large egg
  • •1 teaspoon vanilla extract
  • •3 tablespoons granulated sugar
  • •1 tablespoon ground cinnamon

Directions

  1. 1Preheat oven to 375°F (190°C). In a small bowl, mix flour, baking soda, and salt.
  2. 2In a large bowl, cream together softened butter and 1 1/2 cups sugar until light and fluffy, about 2-3 minutes.
  3. 3Beat in egg and vanilla extract until well combined.
  4. 4Gradually mix in the flour mixture until just combined.
  5. 5In a small bowl, combine 3 tablespoons sugar and cinnamon. Roll dough into 1-inch balls, coat with cinnamon-sugar mixture, and place 2 inches apart on baking sheets.
  6. 6Bake for 8-10 minutes until edges are set but centers are still soft.
  7. 7Cool on baking sheet for 2 minutes, then transfer to a wire rack.

💡 Snickerdoodles need a soft centre when they leave the oven; waiting until the whole cookie looks dry sacrifices the chewiness the cream-of-tartar dough is meant to have.
