Ingredients

  • •2 cups shredded green papaya
  • •2 Thai red chilies
  • •3 cloves garlic
  • •2 tablespoons lime juice
  • •2 tablespoons gluten-free fish sauce
  • •1 tablespoon palm sugar
  • •1/2 cup long beans, cut into 2-inch pieces
  • •1/4 cup cherry tomatoes, halved
  • •3 tablespoons roasted peanuts, crushed
  • •1 lime wedge

Directions

  1. 1Pound garlic and Thai chilies in a mortar and pestle until fragrant.
  2. 2Add long beans and tomatoes, lightly bruise to release flavors.
  3. 3Add shredded green papaya and mix gently.
  4. 4Pour in lime juice, fish sauce, and palm sugar, then toss everything together.
  5. 5Transfer to a serving plate and top with crushed roasted peanuts.
  6. 6Serve immediately with lime wedge on the side.

💡 Green papaya must stay crisp in som tam. Pound to bruise, not pulverize, and dress shortly before serving so the shreds keep their snap.
