Som Tam (Green Papaya Salad)

Ingredients
- •2 cups shredded green papaya
- •2 tablespoons roasted peanuts
- •1/4 cup cherry tomatoes, halved
- •2 tablespoons fresh lime juice
- •2 tablespoons fish sauce
- •1 fresh Thai chili, sliced
- •2 cloves garlic, minced
- •1/4 cup long beans, cut into 2-inch pieces
- •1 tablespoon palm sugar or brown sugar
Directions
- 1In a large mortar and pestle, gently pound the garlic and Thai chili together until fragrant.
- 2Add the long beans and cherry tomatoes, lightly bruising them to release their juices.
- 3Add the shredded green papaya and toss gently with the pestle.
- 4Pour in the lime juice, fish sauce, and palm sugar, then toss everything together until well combined.
- 5Transfer to a serving plate and top with crushed roasted peanuts.
- 6Serve immediately while fresh and crisp.
