Sopa de Fideo

Mexican tomato noodle soup made with toasted thin pasta, onion, garlic, and broth, simple enough for children and practical for a thermos.

Ingredients

  • 8 oz angel hair pasta, broken into 1-inch pieces
  • 4 medium tomatoes, quartered
  • 1/2 medium yellow onion, chopped
  • 2 cloves garlic, chopped
  • 6 cups vegetable broth
  • 2 tbsp vegetable oil
  • 1/4 tsp ground cumin
  • 1 tsp salt
  • 2 tbsp fresh cilantro, chopped

Directions

  1. 1Blend tomatoes, onion, garlic, and 1 cup vegetable broth until mostly smooth.
  2. 2Heat oil in a pot and toast the broken angel hair over medium heat for 3–4 minutes until lightly golden.
  3. 3Pour in the tomato mixture carefully and cook 3 minutes, stirring until slightly thickened.
  4. 4Add remaining broth, cumin, and salt and bring to a gentle boil.
  5. 5Simmer 7–9 minutes until the pasta is tender but not mushy.
  6. 6Stir in cilantro and serve immediately or transfer slightly brothy soup to a preheated thermos.

💡 For a thermos, stop cooking while the noodles are still just firm; they continue softening in the hot broth during the morning.
