Sopa de Fideo
Mexican tomato noodle soup made with toasted thin pasta, onion, garlic, and broth, simple enough for children and practical for a thermos.

Ingredients
- •8 oz angel hair pasta, broken into 1-inch pieces
- •4 medium tomatoes, quartered
- •1/2 medium yellow onion, chopped
- •2 cloves garlic, chopped
- •6 cups vegetable broth
- •2 tbsp vegetable oil
- •1/4 tsp ground cumin
- •1 tsp salt
- •2 tbsp fresh cilantro, chopped
Directions
- 1Blend tomatoes, onion, garlic, and 1 cup vegetable broth until mostly smooth.
- 2Heat oil in a pot and toast the broken angel hair over medium heat for 3–4 minutes until lightly golden.
- 3Pour in the tomato mixture carefully and cook 3 minutes, stirring until slightly thickened.
- 4Add remaining broth, cumin, and salt and bring to a gentle boil.
- 5Simmer 7–9 minutes until the pasta is tender but not mushy.
- 6Stir in cilantro and serve immediately or transfer slightly brothy soup to a preheated thermos.
💡 For a thermos, stop cooking while the noodles are still just firm; they continue softening in the hot broth during the morning.
