Puerto Rican cornmeal sticks filled with cheese and fried until crisp and golden.

Ingredients

  • 2 cups fine cornmeal
  • 3 cups water
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 1 tbsp unsalted butter
  • 8 oz queso blanco, cut into sticks
  • 4 cups vegetable oil for frying

Directions

  1. 1Bring water, salt, sugar, and butter to a boil.
  2. 2Whisk in cornmeal and cook for 3 minutes until a thick dough forms.
  3. 3Cool the dough for 10 minutes until safe to handle.
  4. 4Wrap portions of cornmeal dough around the queso blanco sticks.
  5. 5Fry at 350°F (175°C) for 3–4 minutes until golden.
  6. 6Drain briefly and serve warm.

💡 Seal the cornmeal completely around the cheese so it does not leak into the oil.
