Ingredients

  • •4 slices sourdough bread, thick-cut
  • •4 eggs
  • •2 cups baby spinach
  • •2 tbsp butter
  • •1/4 cup parmesan, grated
  • •1 tsp smoked paprika

Directions

  1. 1Toast sourdough slices until golden and set aside on a baking sheet.
  2. 2Melt butter in a skillet over medium heat.
  3. 3Add spinach and cook until wilted, about 2 minutes, then set aside.
  4. 4Crack eggs into the same skillet and fry to desired doneness.
  5. 5Top each toast with spinach, a fried egg, and parmesan.
  6. 6Sprinkle with smoked paprika and serve immediately.

💡 Wilt spinach before building sourdough egg melts if it seems wet; trapped moisture softens the toast before the cheese finishes melting.
