Southern Collard Greens

Ingredients

  • 2 bunches fresh collard greens
  • 6 slices bacon
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes
  • 2 tablespoons apple cider vinegar

Directions

  1. 1Cook bacon in a large pot over medium heat until crispy, then remove and crumble, leaving 2 tablespoons of bacon fat in the pot.
  2. 2Sauté diced onion in the bacon fat for 5 minutes until softened, then add minced garlic and cook for 1 minute.
  3. 3Wash and chop collard greens, removing tough stems, then add to the pot along with chicken broth, salt, pepper, and red pepper flakes.
  4. 4Bring to a boil, then reduce heat and simmer uncovered for 30 minutes until greens are tender.
  5. 5Stir in apple cider vinegar and crumbled bacon, then taste and adjust seasonings before serving.
