Southwestern Salad
A vibrant and hearty salad loaded with crispy tortilla strips, black beans, corn, and a zesty lime-cilantro dressing.

Ingredients
- •8 cups romaine lettuce, chopped
- •1 can (15 oz) black beans, drained and rinsed
- •1 cup corn kernels, fresh or frozen
- •1 medium red bell pepper, diced
- •1 cup cherry tomatoes, halved
- •1 cup shredded cheddar cheese
- •1 cup tortilla strips
- •3 tablespoons olive oil
- •2 tablespoons lime juice
- •1 tablespoon fresh cilantro, chopped
- •1 teaspoon cumin
- •to taste Salt and pepper
Directions
- 1Whisk together olive oil, lime juice, cilantro, cumin, salt, and pepper in a small bowl to make the dressing.
- 2In a large bowl, combine the chopped romaine lettuce, black beans, corn, bell pepper, and tomatoes.
- 3Pour the dressing over the salad and toss until all ingredients are well coated.
- 4Divide the salad among serving bowls and top with shredded cheddar cheese and tortilla strips.
- 5Serve immediately and enjoy.
