Southwestern Salad

A vibrant and hearty salad loaded with crispy tortilla strips, black beans, corn, and a zesty lime-cilantro dressing.

Ingredients

  • 8 cups romaine lettuce, chopped
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels, fresh or frozen
  • 1 medium red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1 cup tortilla strips
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 tablespoon fresh cilantro, chopped
  • 1 teaspoon cumin
  • to taste Salt and pepper

Directions

  1. 1Whisk together olive oil, lime juice, cilantro, cumin, salt, and pepper in a small bowl to make the dressing.
  2. 2In a large bowl, combine the chopped romaine lettuce, black beans, corn, bell pepper, and tomatoes.
  3. 3Pour the dressing over the salad and toss until all ingredients are well coated.
  4. 4Divide the salad among serving bowls and top with shredded cheddar cheese and tortilla strips.
  5. 5Serve immediately and enjoy.
