Ingredients

  • •2 lbs chicken thighs and drumsticks
  • •1/2 cup soy sauce
  • •1/4 cup oyster sauce
  • •3 tbsp sugar
  • •6 cloves garlic, minced
  • •1 tbsp ginger, minced
  • •2 star anise
  • •1 cinnamon stick
  • •2 cups chicken broth
  • •3 green onions, chopped
  • •2 tbsp vegetable oil

Directions

  1. 1Heat oil in a large pot over medium-high heat and brown the chicken pieces on all sides, about 8 minutes total.
  2. 2Add minced garlic and ginger, stir-fry for 1 minute until fragrant.
  3. 3Pour in soy sauce, oyster sauce, and sugar, stirring to coat the chicken evenly.
  4. 4Add star anise, cinnamon stick, and chicken broth, bringing to a boil.
  5. 5Reduce heat to low, cover, and simmer for 25-30 minutes until chicken is tender and cooked through.
  6. 6Uncover and increase heat to medium, cooking for another 5 minutes to reduce the sauce slightly.
  7. 7Remove from heat, garnish with green onions, and serve hot over steamed rice.

💡 Soy-sauce chicken needs a gentle braise, not a hard boil; rapid cooking tightens the skin and meat before the sweet-savoury liquid penetrates.
