Soy Sauce Duck

Tender duck braised in a savory soy-based sauce until the skin is glossy and the meat falls off the bone.

Ingredients

  • 1 whole duck (about 2 kg), cut into pieces
  • 1/2 cup soy sauce
  • 3 tablespoons dark soy sauce
  • 2 tablespoons sugar
  • 4 slices ginger
  • 4 cloves garlic, smashed
  • 2 star anise
  • 1 stick cinnamon
  • 2 cups water
  • 2 scallions, cut into 2-inch pieces
  • 1 tablespoon vegetable oil

Directions

  1. 1Heat oil in a large pot or wok over medium-high heat. Brown the duck pieces on all sides for 5-7 minutes, then remove and set aside.
  2. 2In the same pot, stir-fry ginger and garlic for 30 seconds until fragrant.
  3. 3Return duck to the pot and add soy sauce, dark soy sauce, sugar, star anise, and cinnamon. Stir well to coat.
  4. 4Pour in water and bring to a boil, then reduce heat to low, cover, and simmer for 60 minutes, stirring occasionally.
  5. 5Add scallions and cook uncovered for an additional 10-15 minutes until the sauce reduces and thickens slightly.
  6. 6Taste and adjust seasoning if needed. Serve hot with steamed rice.
