Spaghetti Frittata with Shrimp and Cheddar

Ingredients
- •8 oz spaghetti, cooked and cooled
- •12 oz frozen shrimp, thawed and chopped
- •3/4 cup frozen peas, thawed
- •1.5 cups cheddar cheese, shredded
- •1 medium yellow onion, thinly sliced
- •2 tbsp olive oil
- •1 tsp smoked paprika
Directions
- 1Heat olive oil in oven-safe skillet, sauté onion until golden, about five minutes.
- 2Add shrimp pieces, cook two minutes until just pink, stir in peas.
- 3Combine spaghetti, cheddar, smoked paprika, salt, and pepper in a large bowl.
- 4Add shrimp mixture to bowl, toss everything together thoroughly.
- 5Press mixture firmly into the hot skillet, cook five minutes until bottom is crispy.
- 6Transfer skillet to 375°F oven, bake 15 minutes until set and cheese is melted.
- 7Slide onto cutting board, slice into wedges and serve.
