Spaghetti Frittata with Shrimp and Cheddar

A fun, crispy-edged spaghetti cake packed with shrimp, peas, and gooey melted cheddar.

Ingredients

  • 8 oz spaghetti, cooked and cooled
  • 12 oz frozen shrimp, thawed and chopped
  • 3/4 cup frozen peas, thawed
  • 1.5 cups cheddar cheese, shredded
  • 1 medium yellow onion, thinly sliced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika

Directions

  1. 1Heat olive oil in oven-safe skillet, sauté onion until golden, about five minutes.
  2. 2Add shrimp pieces, cook two minutes until just pink, stir in peas.
  3. 3Combine spaghetti, cheddar, smoked paprika, salt, and pepper in a large bowl.
  4. 4Add shrimp mixture to bowl, toss everything together thoroughly.
  5. 5Press mixture firmly into the hot skillet, cook five minutes until bottom is crispy.
  6. 6Transfer skillet to 375°F oven, bake 15 minutes until set and cheese is melted.
  7. 7Slide onto cutting board, slice into wedges and serve.
