- •1.5 lbs pork tenderloin
- •2 cups cooked spelt
- •2 medium sweet potatoes, cubed
- •3 tbsp olive oil
- •2 tbsp apple cider vinegar
- •1 tbsp Dijon mustard
- •2 cups fresh spinach
- •1 apple, thinly sliced

- •1 tsp dried thyme
- •2 cloves garlic, minced
Directions
- 1Preheat oven to 400°F. Season pork tenderloin with salt, pepper, and thyme. Roast for 20-25 minutes until internal temperature reaches 145°F.
- 2Toss cubed sweet potatoes with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast alongside pork for 20-25 minutes until caramelized.
- 3Whisk together apple cider vinegar, Dijon mustard, minced garlic, and remaining 2 tbsp olive oil in a small bowl to make dressing.
- 4Cook spelt according to package directions if not already prepared; drain and set aside.
- 5Slice the rested pork tenderloin into bite-sized pieces.
- 6Assemble bowls by dividing spelt, spinach, roasted sweet potatoes, and pork among four bowls.
- 7Top each bowl with fresh apple slices and drizzle generously with apple cider vinegar dressing. Serve warm.
