Spinach and Black Bean Wrap

Ingredients

  • 2 large flour tortillas
  • 2 cups fresh spinach
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup shredded cheddar cheese
  • 1/2 red bell pepper, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup diced tomato
  • 1/4 cup sour cream
  • 1/2 teaspoon cumin
  • to taste Salt and pepper

Directions

  1. 1Warm the black beans in a small saucepan over medium heat with cumin, salt, and pepper for 3-4 minutes.
  2. 2Warm the tortillas in a skillet or directly over a gas flame for about 30 seconds per side until pliable.
  3. 3Spread 2 tablespoons of sour cream on each tortilla, leaving a border around the edges.
  4. 4Layer spinach, warm black beans, cheese, bell pepper, onion, and tomato down the center of each tortilla.
  5. 5Fold in the sides of the tortilla and roll tightly from bottom to top, wrapping it in foil if needed.
  6. 6Cut in half diagonally and serve immediately.
