Spinach and Black Bean Wrap

Ingredients
- •2 large flour tortillas
- •2 cups fresh spinach
- •1 can (15 oz) black beans, drained and rinsed
- •1/2 cup shredded cheddar cheese
- •1/2 red bell pepper, diced
- •1/4 red onion, thinly sliced
- •1/2 cup diced tomato
- •1/4 cup sour cream
- •1/2 teaspoon cumin
- •to taste Salt and pepper
Directions
- 1Warm the black beans in a small saucepan over medium heat with cumin, salt, and pepper for 3-4 minutes.
- 2Warm the tortillas in a skillet or directly over a gas flame for about 30 seconds per side until pliable.
- 3Spread 2 tablespoons of sour cream on each tortilla, leaving a border around the edges.
- 4Layer spinach, warm black beans, cheese, bell pepper, onion, and tomato down the center of each tortilla.
- 5Fold in the sides of the tortilla and roll tightly from bottom to top, wrapping it in foil if needed.
- 6Cut in half diagonally and serve immediately.
