Ingredients

  • 3 large eggs
  • 2 cups fresh spinach
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons butter
  • 1 clove garlic, minced
  • 2 tablespoons whole milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped

Directions

  1. 1Heat 1 tablespoon of butter in a non-stick skillet over medium heat, add minced garlic and sauté for 30 seconds until fragrant.
  2. 2Add spinach to the skillet and cook for 2 minutes, stirring occasionally, until wilted. Remove from skillet and set aside.
  3. 3Whisk together eggs, milk, salt, and pepper in a bowl until well combined.
  4. 4Melt the remaining 1 tablespoon of butter in the skillet over medium heat, then pour in the egg mixture and let it cook undisturbed for 1 minute.
  5. 5Gently push cooked eggs toward the center, tilting the skillet to allow uncooked eggs to flow to the edges, cooking for another minute.
  6. 6Distribute cooked spinach and feta cheese over one half of the omelet, sprinkle with fresh dill, then fold the omelet in half.
  7. 7Cook for another 30 seconds, then slide onto a plate and serve immediately.
