Spinach and Feta Omelet

Ingredients
- •3 large eggs
- •2 cups fresh spinach
- •1/4 cup crumbled feta cheese
- •2 tablespoons butter
- •1 clove garlic, minced
- •2 tablespoons whole milk
- •1/4 teaspoon salt
- •1/8 teaspoon black pepper
- •1 tablespoon fresh dill, chopped
Directions
- 1Heat 1 tablespoon of butter in a non-stick skillet over medium heat, add minced garlic and sauté for 30 seconds until fragrant.
- 2Add spinach to the skillet and cook for 2 minutes, stirring occasionally, until wilted. Remove from skillet and set aside.
- 3Whisk together eggs, milk, salt, and pepper in a bowl until well combined.
- 4Melt the remaining 1 tablespoon of butter in the skillet over medium heat, then pour in the egg mixture and let it cook undisturbed for 1 minute.
- 5Gently push cooked eggs toward the center, tilting the skillet to allow uncooked eggs to flow to the edges, cooking for another minute.
- 6Distribute cooked spinach and feta cheese over one half of the omelet, sprinkle with fresh dill, then fold the omelet in half.
- 7Cook for another 30 seconds, then slide onto a plate and serve immediately.
