Spinach Fatayer

Lebanese triangular hand pies filled with lemony spinach, onion, and sumac, baked until golden and sturdy enough for a packed lunch.

Ingredients

  • 3 cups all-purpose flour
  • 2 1/4 tsp instant yeast
  • 1 tsp granulated sugar
  • 1 tsp salt
  • 1 cup warm water
  • 1/4 cup olive oil
  • 10 oz fresh spinach, chopped
  • 1 medium yellow onion, finely diced
  • 3 tbsp fresh lemon juice
  • 2 tsp sumac
  • 1/4 tsp black pepper

Directions

  1. 1Mix flour, yeast, sugar, and half the salt, then add warm water and 2 tablespoons olive oil to form a soft dough.
  2. 2Knead the dough 5 minutes, cover, and let rise 45 minutes until slightly puffed.
  3. 3Massage spinach, onion, lemon juice, sumac, remaining salt, pepper, and remaining olive oil, then squeeze out excess liquid.
  4. 4Divide the dough into twelve balls and roll each into a 5-inch circle.
  5. 5Place spinach filling in each centre and pinch three edges together firmly to form sealed triangles.
  6. 6Bake at 400°F (200°C) for 18–20 minutes until the bottoms and seams are golden.

💡 Squeeze the spinach filling after seasoning it; wet filling steams the dough and can force the triangular seams open in the oven.
