Spinach Omelet

Ingredients
- •2 cups fresh spinach
- •3 large eggs
- •2 tablespoons butter
- •1/4 cup shredded cheddar cheese
- •1/4 small onion, diced
- •1 clove garlic, minced
- •to taste salt and pepper
- •1 tablespoon milk
Directions
- 1Heat 1 tablespoon butter in a non-stick skillet over medium heat and sauté the diced onion and garlic until fragrant, about 1 minute.
- 2Add the fresh spinach to the skillet and cook until wilted, about 2 minutes, then transfer to a plate.
- 3Whisk together the eggs and milk in a bowl, season with salt and pepper.
- 4Add the remaining tablespoon of butter to the skillet over medium heat and pour in the egg mixture, tilting to spread evenly.
- 5When the eggs begin to set around the edges, gently push cooked portions toward the center, letting uncooked egg flow to the edges, about 2 minutes.
- 6When the top is still slightly moist, add the cooked spinach and cheese to one half of the omelet.
- 7Fold the omelet in half and slide onto a plate, serving immediately.
