Spinach Omelet

Ingredients

  • 2 cups fresh spinach
  • 3 large eggs
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese
  • 1/4 small onion, diced
  • 1 clove garlic, minced
  • to taste salt and pepper
  • 1 tablespoon milk

Directions

  1. 1Heat 1 tablespoon butter in a non-stick skillet over medium heat and sauté the diced onion and garlic until fragrant, about 1 minute.
  2. 2Add the fresh spinach to the skillet and cook until wilted, about 2 minutes, then transfer to a plate.
  3. 3Whisk together the eggs and milk in a bowl, season with salt and pepper.
  4. 4Add the remaining tablespoon of butter to the skillet over medium heat and pour in the egg mixture, tilting to spread evenly.
  5. 5When the eggs begin to set around the edges, gently push cooked portions toward the center, letting uncooked egg flow to the edges, about 2 minutes.
  6. 6When the top is still slightly moist, add the cooked spinach and cheese to one half of the omelet.
  7. 7Fold the omelet in half and slide onto a plate, serving immediately.
