Spinach Soufflé

Ingredients

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 4 ounces cheddar cheese, grated
  • 5 large eggs, separated
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg

Directions

  1. 1Preheat oven to 375°F and butter a 2-quart soufflé dish or baking dish.
  2. 2Melt butter in a saucepan, whisk in flour to create a roux, then gradually add milk while stirring until thickened, about 2 minutes.
  3. 3Stir in spinach, cheese, egg yolks, salt, pepper, and nutmeg until well combined, then remove from heat.
  4. 4In a separate bowl, beat egg whites until stiff peaks form.
  5. 5Gently fold the egg whites into the spinach mixture in two additions, being careful not to deflate the whites.
  6. 6Pour mixture into prepared dish and bake for 25-30 minutes until golden and puffed.
  7. 7Serve immediately while the soufflé is still risen.
