Spinach Soufflé

Ingredients
- •2 tablespoons butter
- •2 tablespoons all-purpose flour
- •1 cup whole milk
- •10 ounces frozen spinach, thawed and squeezed dry
- •4 ounces cheddar cheese, grated
- •5 large eggs, separated
- •1/4 teaspoon salt
- •1/4 teaspoon black pepper
- •1/4 teaspoon nutmeg
Directions
- 1Preheat oven to 375°F and butter a 2-quart soufflé dish or baking dish.
- 2Melt butter in a saucepan, whisk in flour to create a roux, then gradually add milk while stirring until thickened, about 2 minutes.
- 3Stir in spinach, cheese, egg yolks, salt, pepper, and nutmeg until well combined, then remove from heat.
- 4In a separate bowl, beat egg whites until stiff peaks form.
- 5Gently fold the egg whites into the spinach mixture in two additions, being careful not to deflate the whites.
- 6Pour mixture into prepared dish and bake for 25-30 minutes until golden and puffed.
- 7Serve immediately while the soufflé is still risen.
