Split Pea Soup
A hearty and comforting classic soup with tender split peas, smoky ham, and aromatic vegetables.

Ingredients
- •1 pound dried split peas
- •8 cups chicken or vegetable broth
- •1 ham bone or 8 ounces diced ham
- •2 medium carrots, diced
- •2 stalks celery, diced
- •1 medium onion, diced
- •2 cloves garlic, minced
- •1 teaspoon dried thyme
- •1 bay leaf bay leaf
- •to taste salt and black pepper
Directions
- 1Rinse the split peas and add to a large pot with broth and ham bone or diced ham. Bring to a boil, then reduce heat and simmer for 30 minutes.
- 2Add diced carrots, celery, onion, garlic, thyme, and bay leaf to the pot.
- 3Continue simmering for 45-60 minutes until peas are very soft and soup thickens, stirring occasionally.
- 4Remove the ham bone if using, and shred any meat to return to the soup.
- 5Season with salt and pepper to taste, and remove the bay leaf before serving.
