Steak and Blue Cheese Salad

Ingredients

  • 2 New York strip steaks (8 oz each)
  • 6 cups mixed salad greens
  • 4 oz blue cheese, crumbled
  • 1/2 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • to taste Salt and pepper

Directions

  1. 1Pat steaks dry and season generously with salt and pepper on both sides.
  2. 2Heat a cast-iron skillet over high heat until very hot, about 3 minutes.
  3. 3Sear steaks for 4-5 minutes per side for medium-rare, then rest for 5 minutes before slicing.
  4. 4Whisk together olive oil, balsamic vinegar, and Dijon mustard in a small bowl.
  5. 5Arrange mixed greens on plates and top with tomatoes and red onion.
  6. 6Slice rested steaks and arrange over the salad, then sprinkle with blue cheese.
  7. 7Drizzle with vinaigrette and serve immediately.
