Steak and Blue Cheese Salad

Ingredients
- •2 New York strip steaks (8 oz each)
- •6 cups mixed salad greens
- •4 oz blue cheese, crumbled
- •1/2 cup cherry tomatoes, halved
- •1/4 red onion, thinly sliced
- •3 tablespoons olive oil
- •1 tablespoon balsamic vinegar
- •1 teaspoon Dijon mustard
- •to taste Salt and pepper
Directions
- 1Pat steaks dry and season generously with salt and pepper on both sides.
- 2Heat a cast-iron skillet over high heat until very hot, about 3 minutes.
- 3Sear steaks for 4-5 minutes per side for medium-rare, then rest for 5 minutes before slicing.
- 4Whisk together olive oil, balsamic vinegar, and Dijon mustard in a small bowl.
- 5Arrange mixed greens on plates and top with tomatoes and red onion.
- 6Slice rested steaks and arrange over the salad, then sprinkle with blue cheese.
- 7Drizzle with vinaigrette and serve immediately.
