Steak and Egg Breakfast Sandwich

Ingredients
- •8 oz sirloin or ribeye steak
- •4 large eggs
- •1 medium yellow onion, sliced
- •4 slices cheddar cheese
- •4 slices bread, sourdough or ciabatta
- •3 tablespoons butter, divided
- •1 teaspoon salt
- •½ teaspoon black pepper
- •2 tablespoons mayonnaise
Directions
- 1Cook sliced onions in 1 tablespoon butter over medium heat for 8-10 minutes until golden and caramelized, season with salt and pepper, then set aside.
- 2Pat steak dry and season generously with salt and pepper; cook in a skillet over high heat for 3-4 minutes per side for medium-rare, then slice into strips.
- 3In the same skillet, fry 4 eggs in 1 tablespoon butter until whites are set but yolks remain runny, about 3 minutes.
- 4Toast bread slices until golden, then spread mayonnaise on each slice.
- 5Layer steak strips, caramelized onions, and one fried egg on each bottom bread slice; top each with 2 slices of cheese.
- 6Broil sandwiches for 1-2 minutes until cheese melts, then cap with top bread slice and serve immediately.
