Stir-fried Broccoli and Chicken with Brown Rice
Tender chicken and crisp broccoli tossed in a savory soy-ginger sauce over nutty brown rice.

Ingredients
- •2 cups cooked brown rice
- •1.5 lbs boneless chicken breast, cubed
- •4 cups fresh broccoli florets
- •3 cloves garlic, minced
- •1 tbsp fresh ginger, grated
- •3 tbsp soy sauce
- •2 tbsp vegetable oil
- •1 tbsp sesame oil
- •1 tsp cornstarch
- •1/4 cup chicken broth
- •1 tsp red pepper flakes
Directions
- 1Cook brown rice according to package directions and set aside.
- 2Mix soy sauce, sesame oil, ginger, cornstarch, and chicken broth in a small bowl.
- 3Heat vegetable oil in a large wok or skillet over high heat, add chicken and cook until golden, about 5-7 minutes, then remove and set aside.
- 4Add remaining oil to the pan, stir-fry broccoli for 3-4 minutes until tender-crisp, then add garlic and red pepper flakes.
- 5Return chicken to the pan, pour sauce over everything, and toss for 2-3 minutes until sauce thickens.
- 6Serve the stir-fry over brown rice and enjoy immediately.
