Ingredients

  • 1 1/2 lb lotus root, peeled and thinly sliced
  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 2 tbsp Chinese black vinegar
  • 1 tbsp soy sauce
  • 1 tsp granulated sugar
  • 3 green onions, sliced

Directions

  1. 1Soak the sliced lotus root in cold water for 5 minutes, then drain and dry.
  2. 2Heat vegetable oil in a wok over high heat.
  3. 3Stir-fry the lotus root for 4 minutes until crisp-tender.
  4. 4Add garlic and cook for 30 seconds.
  5. 5Add black vinegar, soy sauce, and sugar and toss for 1 minute.
  6. 6Finish with green onions and serve immediately.
