Stir-Fried Squid with Garlic and Chili

Ingredients

  • 1.5 lbs squid, cleaned and sliced into rings
  • 4 cloves garlic, minced
  • 2 red chilies, sliced
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 1/2 cup sliced onion
  • 1 cup sliced bell pepper
  • 2 tbsp green onions, chopped
  • 1 tsp cornstarch mixed with 2 tbsp water

Directions

  1. 1Heat 1 tbsp vegetable oil in a wok or large skillet over high heat until smoking.
  2. 2Add squid rings in batches and stir-fry for 1-2 minutes until opaque, then remove and set aside.
  3. 3Add remaining oil, then sauté minced garlic and sliced chilies for 30 seconds until fragrant.
  4. 4Add onion and bell pepper, stir-fry for 2-3 minutes until tender-crisp.
  5. 5Return squid to the wok and pour in soy sauce, oyster sauce, and sesame oil; toss well.
  6. 6Add cornstarch slurry and stir for 1 minute until sauce thickens slightly.
  7. 7Garnish with green onions and serve immediately over steamed rice.
